Chocolate black rice pudding or a chocolate risotto? Either way I’m all for chocolate for breakfast!

Rice in general gets a pretty bad rep. One of the first things people are asked to do when on a healthy eating or weight loss plan is to ditch rice. How can something that is a staple for billions of people not be nutritious? The thought of rice for breakfast is hard to fathom for some but perhaps its in the timing. Rice, especially black or brown is a healthy complex carb unlike white rice which is a simple carb and is probably best had in the morning- giving you energy for the rest of the day.

With a high fibre and iron content, Black rice has several other health benefits- it is high in antioxidants, particularly Anthocyanins, that help protect the body from free radicals and has anti inflammatory and disease fighting properties. It is lower in carbs and higher in protein and fibre as compared to white or even brown rice.

Health benefits aside, it has a nutty flavour and a nice bite to it. So would I ditch rice altogether? I think not.

This rice pudding is pretty good as a breakfast and also as dessert. Delicious served warm and cold right out of the fridge. Take your pick!

Chocolate black rice pudding
 
Ingredients
  • ½ cup black rice
  • 2 cups water
  • 2 cups almond milk
  • 3 tbsp cacao
  • 2 tbsp honey
  • ¼ tsp cinnamon or 1 tsp vanilla extract
  • pinch of sea salt
Instructions
  1. In a saucepan bring the rice and water to a boil and reduce to a simmer until the water is almost evaporated
  2. Add in the almond milk and simmer for an additional 10-15 minutes, while continuing to stir until the milk is almost absorbed but still creamy and then add the cacao, vanilla or cinnamon and a pinch of sea salt.
  3. Add in the honey to sweeten once off the heat
  4. Serve warm or cold
